Super Salad with Balsamic Dressing
This hearty salad holds well and packs a powerful punch with nutrient content, flavor, and satisfaction!
1 bunch kale, stripped off spine
½ head Napa cabbage, finely shredded or finely chopped
¼ red onion, thinly sliced
3-4 carrots, peeled and grated
½ cup grape tomatoes, sliced in half
1 cup raw edamame, shelled
1 cup blueberries, rinsed
3 tablespoons balsamic vinegar
2 tablespoons mustard of choice, we prefer brown mustard
1 tablespoons maple syrup
1 tablespoon fresh lemon juice
Fresh dill (optional)
In a big salad bowl, combine the finely chopped kale with the finely chopped Napa cabbage, red onion, carrots, tomatoes, edamame and bluberries.
Combine all dressing ingredients in a bowl and whisk.
Toss salad in dressing and serve.
