Rip Esselstyn spent a decade as one of the premier triathletes in the world. He then joined the Austin Fire Department where he introduced his passion for a whole-food, plant-based diet to Austin’s Engine 2 Firehouse in order to rescue a firefighting brother’s health. To document his success he wrote the national bestselling book, The Engine 2 Diet, which shows the irrefutable connection between a plant-based diet and good health. He is featured prominently in the documentary Forks Over Knives and The Game Changers.

DR. CALDWELL B ESSELSTYN JR

PHYSICIAN

Dr. Caldwell B. Esselstyn, Jr. is author of the New York Times bestseller Prevent and Reverse Heart Disease. Dr. Esselstyn was a researcher and clinician at the Cleveland Clinic for more than thirty-five years. In 1991, he served as the president of the American Association of Endocrine Surgeons and organized the first National Conference on the Elimination of Heart Disease. In 2005, he became the first recipient of the Benjamin Spock Award for Compassion in Medicine. Dr. Esselstyn and his wife, Ann Crile Esselstyn, have followed a plant-based diet for more than forty years. They work together to counsel patients in Cleveland and at the farm in Upstate New York where Dr. Esselstyn grew up

ANN CRILE ESSELSTYN

AUTHOR

Ann Crile Esselstyn graduated from Smith College and received a master’s degree in education from Wheelock College. She taught English and some history for 27 years and was a field hockey coach for 15 years. Ann won the Hostatler Award for outstanding teacher in 1963. She stopped teaching in 2000 to focus on creating delicious and healthy recipes to prevent and reverse heart disease, and counseling patients with her husband Dr. Caldwell Esselstyn on how to follow a plant-based diet. Through the years she juggled four children, teaching, and figuring out plant-based, oil-free ways to cook. Ann developed the recipes for the New York Times Best Seller, Prevent and Reverse Heart Disease and in 2014 she wrote The Prevent and Reverse Heart Disease Cookbook with her daughter Jane Esselstyn.

JANE ESSELSTYN

AUTHOR

Jane Esselstyn is an avid and inventive designer of plant-based recipes and the co-author of The Prevent and Reverse Heart Disease Cookbook with her next-door neighbor and mom, Ann. And she created the recipe section of #1 New York Times Best Seller, Plant-Strong by her brother, Rip. Jane has worked as a science, outdoor, and health educator for over 25 years, and more recently a researcher. The Journal of Pediatrics recently published the study she worked on with the Cleveland Clinic, observing the effects of a plant-based diet on pediatric obesity. A tireless champion for kids and their health, Jane brings remarkable clarity, compassion, and humor to the table and presents a no-nonsense approach to raising plant-strong kids.

CHEF & AUTHOR

Chef AJ is a chef, culinary instructor, and speaker who uses her series Healthy Living with Chef AJ to promote her plant-based diet. She has also appeared as a guest on The Tonight Show Starring Johnny Carson, The Tonight Show with Jay Leno, and The Late Show with David Letterman. She has worked as the executive pastry chef at LA’s Sante La Brea Restaurant and is the creator of the Ultimate Weight Loss Program. Her expertise comes from her own personal journey, forty years in the industry, and a certificate in Plant-Based Nutrition from eCornell University. Chef AJ is a member of the American College of Lifestyle Medicine. She is also the author of Unprocessed: How to Achieve Vibrant Health and Your Ideal Weight. She is the recipe author of Own Your Health by Glen Merzer.

SHERRA AGUIRRE

AUTHOR

Sherra is an health enthusiast, environmentalist, and food security activist. She founded and led a successful business for three decades, winning national awards for entrepreneurship, innovation, and service excellence. She sold the company in 2016 to focus on sharing her passion for a healthy diet and lifestyle. One of Aguirre’s main goals with her new book is to make the change to a healthier diet and lifestyle more accessible, particularly to African Americans and other communities who are at high risk for diabetes and heart disease. Aguirre writes about the healing qualities of compassion, simplicity, and gratitude, and the ripple effect vegan eating can have on individuals, families, and communities.

Carleigh is an American author, TikTok star, YouTuber, and social media starlet who has created a huge following as a vegan plant-based recipe and New York Times Bestselling Cookbook Author. Along with this, her TikTok videos have crossed millions of likes and followers. Carleigh also owns a self-titled Youtube channel as well as is active on Instagram and Twitter.

AUTHOR

Nisha (CookingForPeanuts) is the author of Practically Vegan: More Than 100 Easy Delicious Vegan Dinners on a Budget. She is a Registered Dietitian Nutritionist, Natural Gourmet Institute Culinary School Graduate, and food blogger. Nisha is born and raised in Montego Bay, Jamaica to Indian parents, and educated in England, Montreal, and New York City. She is the creator of Cooking For Peanuts, a popular vegan Instagram account, and blog. Nisha currently lives in NYC with three teenaged girls.

JULIEANNA HEVER

REGISTERED DIETITIAN & AUTHOR

As a Registered Dietitian, Julieanna has authored seven books, including the brand new Choose You Now Diet, The Healthspan Solution, Plant-Based Nutrition (Idiots Guide), Vegiterranean Diet, and two peer-reviewed journal articles on plant-based nutrition for healthcare professionals (in Journal of Geriatric Cardiology and Permanente Journal). Cathy Fisher is the author of the Straight Up Food cookbook and creator of the blog StraightUpFood.com, featuring 100% plant-food recipes free of added salt, oil and sugar (and gluten-free). Cathy has been vegan for 23 years and has taught cooking classes in Santa Rosa, California since 2010 at TrueNorth Health Center (founded by Alan Goldhamer, D.C.) and the McDougall Program (founded by John McDougall, M.D.).

Bailey Ruskus was diagnosed with endometriosis at age 11, leaving her in tremendous amounts of chronic pain, while constantly being dosed up on multiple medications. Throughout her young adulthood, she exhausted all standard treatments and turned back to the only thing she really knew – FOOD.


You see, Bailey, who goes by Chef Bai - is also a classically trained chef from San Francisco’s Le Cordon Bleu. She spent years in the grind working 65-70 hours a week until her body just simply collapsed. Nothing about her lifestyle was sustainable, that is, until she went back to her food choices and began to study the true healing power of plants. She literally had to “unlearn” what she had learned in culinary school.

Columbus Batiste, MD, FACC, FSCAI, is the Chief of Cardiology at Kaiser Permanente Riverside and Moreno Valley Medical Centers. He completed his residency in Internal Medicine and fellowship in Cardiovascular Disease at Loma Linda University Medical Center. He is also known as the “Healthy Heart Doc” and he endorses a holistic approach to health care, emphasizing nutrition, stress reduction, and exercise.

CARDIOLOGIST & AUTHOR

Dr. Aggarwal gives talks around the community and the country. She was named a “Next Generation Innovator” by Cardiology Today. She is often featured in Veg News, Naked Magazine and has been featured in forksoverknives.com. She conducts research on nutrition education in medical institutions and on how a plant-based diet impacts cardiovascular disease. She has published in major medical journals such as Journal of American College of Cardiology and American Journal of Medicine.


Board certified in cardiology, echocardiography, nuclear cardiology and advanced cholesterol management, she is a fellow of the American College of Cardiology (ACC), where she is a member of the nutrition council working on nutrition policies for the nation. Dr. Aggarwal specializes in preventative management of heart disease with lifestyle techniques in conjunction with medications. She is the author of the book “Body on Fire: How Inflammation Triggers Chronic Illness and the Tools We Have to Fight It,” which outlines prescriptions to help guide people to better health.
