Cheezy Chickpea Broccoli Soup
2 cans chickpeas including aquafaba
3/4 cup nutritional yeast
1/4 cup whole wheat flour
1 box PLANTSTRONG Slow Simmered Vegetable Broth or 2 cups no salt added vegetable broth
16 ounces unsweetened plant milk
1 teaspoon Bragg’s Liquid Aminos or Tamari
1 teaspoon yellow mustard
1 teaspoon smoked paprika
1/2 teaspoon turmeric
1 head broccoli chopped fine
Fresh cracked black pepper to taste
Whisk flour, nutritional yeast, turmeric, and smoked paprika with the drained aquafaba from the chickpeas.
Add the Bragg’s and the broth until well combined. Bring to a boil, then reduce the heat to low.
Add the plant milk and whisk until blended.
Add chickpeas and broccoli and simmer on low for 10 minutes or until broccoli is tender.
Do not bring to a boil after you add the plant milk. Serve with fresh cracked black pepper.
